In all other instances, cooking the truffle is heresy, as it could lose all its flavour. However, black truffle oil has a more nuanced flavour profile, and a texture that works with many dishes. In keeping with the Willamette Valley Visitors Association, Oregon is home to four native truffle species: the Oregon Winter White Truffle, Oregon Black Truffle, Oregon Spring White Truffle, and Oregon Brown Truffle. Oregon Spring White truffles have a natural or floral taste that some say is similar to garlic. Also identified as the Bianchetto or Marzuolo, the White Spring Truffle has a unique, more pungent garlicky aroma in comparison with the Precious White Truffle. Truffle oil, either white or black, is a delightful and tasty additional to any meal.
