There are completely vegan truffle butters out there, but sadly we would not have any nice suggestions. Both summer time and Autumn truffles are better when the robust outer peridium is gently scraped away with a pairing knife as on most events it can be tough and bitter which takes away from the delicate caramel, vanilla notes of the interior. It's 7.30 on a misty autumn morning 50 miles from Trieste, and the first rays of sunlight are sneaking by means of spindly timber.
