Back at Fontana Fredda’s tasting room, I loved their 2010 Barolo Serralunga D’Alba (£30/bottle), a magnificent Barolo aged for 3 years with an intense red colour, notes of purple cherry and pronounced but tremendous tannins. The menu correct started with freshly made tagliatelle with parsley, 36 months aged Parmesan cheese, melted butter and shavings of white truffle.
