Aromatically less intense and delicate than the Black Truffle (Tuber melanosporum), remains a truffle with its scent approaching and slightly paying homage to mushrooms and undergrowth. They're a little less lumpy than different truffle varieties (which is why they're referred to as Smooth Black Truffles), taking on a more spherical shape. Slightly bit can go a long way, so you don’t need to use an excessive amount of, or chances are you'll destroy the dish. Saute the shallots calmly in slightly butter.
