Aromatically much less intense and delicate than the Black Truffle (Tuber melanosporum), remains a truffle with its scent approaching and barely harking back to mushrooms and undergrowth. They're rather less lumpy than other truffle varieties (which is why they're called Smooth Black Truffles), taking on a more spherical shape. A bit of bit can go a good distance, so that you don’t want to use too much, or chances are you'll spoil the dish. Saute the shallots flippantly in a little butter. The steak was bursting with warm juice that ran like a river into the valley of melted truffle butter on the plate. To serve, pop solidified butter out of teacup upside down onto a plate using a spatula.
