Back at Fontana Fredda’s tasting room, I loved their 2010 Barolo Serralunga D’Alba (£30/bottle), a magnificent Barolo aged for three years with an intense purple colour, notes of crimson cherry and pronounced however positive tannins. The menu proper began with freshly made tagliatelle with parsley, 36 months aged Parmesan cheese, melted butter and shavings of white truffle. Once cooked, drizzle with white truffle oil and add shavings of the white truffle (if using) to garnish. White Truffle Oil in a 250ml bottle. What We Drank: We began with a glass of Alma Bellavista Cuvee Brut Franciacorta (£12.50 per glass, £58 per bottle).
