Aromatically much less intense and delicate than the Black Truffle (Tuber melanosporum), stays a truffle with its scent approaching and slightly harking back to mushrooms and undergrowth. They're rather less lumpy than other truffle varieties (which is why they're called Smooth Black Truffles), taking on a more spherical form. A little bit can go a long way, so that you don’t want to make use of an excessive amount of, or you could smash the dish. Saute the shallots evenly in slightly butter. The steak was bursting with warm juice that ran like a river into the valley of melted truffle butter on the plate.
